By Vickie Chynoweth
Ingredients:
1 1/4 cup Krusteaz Buttermilk Pancake Mix
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup sugar
1 large egg
1/2 cup of milk or nut milk
1 teaspoon vanilla extract
2 tablespoons Greek extra virgin olive oil (Ancient Trees)
1/2 cup pureed strawberries (Sidhu Farms)
2 tablespoons Strawberry-Rhubarb Jam (Sidhu Farms)
Glaze:
2 cups powdered sugar
1 teaspoon vanilla extract
2 tablespoons Strawberry-Rhubarb Jam (Sidhu Farms)
1-2 tablespoons milk or nut milk
Directions:
1. Preheat oven 350. Use Ancient Trees Greek Extra Virgin Olive Oil to grease 12 doughnut molds.
2. Whisk together the pancake mix, baking powder, salt. Add egg, milk, vanilla extract, and Ancient Trees Greek Extra Virgin Olive Oil. Fold in pureed Sidhu Farms strawberries and strawberry rhubarb jam until thoroughly blended.
3. Spoon batter into the prepared doughnut pan, filling almost to the top without covering the top of center.
4. Bake for 15 minutes. Let doughnuts cool for 5 minutes before removing from pan and transferring to a wire rack.
5. While doughnuts are cooling, make the glaze. Combine powdered sugar, vanilla extract, Sidhu Farms strawberry rhubarb jam, and 1-2 tablespoons of milk. Mix until smooth.
6. Dip each cooled doughnuts in glaze and place back on rack to let glaze set. When glaze is set, place in an airtight container for up to 2 days or in the refrigerator. Enjoy!
