Well-Fed from the Federal Way Farmers Market: Lemon Blackberry Bars

This week’s recipe includes blackberries and eggs, both found at the Federal Way Farmers Market.

The farmers market is located behind The Commons mall along South 324th Street in Federal Way.

Lemon Blackberry Bars

Crust:

• 1 cup of unsalted butter, melted

• 1/4 cup each sugar and brown sugar

• 2 cups of flour

• 2 tsp vanilla

Lemon Filling:

• 2 cups sugar

• 1/3 cup flour

• 6 eggs

• 1/2 cup lemon juice (3-4 Lemons)

• Grated lemon rind from 1 lemon

Blackberry Sauce:

• 1 cup of blackberries Sidhu Farms

• 3-4 tbsp sugar

Directions:

1. Heat oven to 350 degrees. Line 13 X 9 pan with parchment paper or aluminum foil.

2. Make the crust: stir butter, sugars, vanilla and salt in a bowl. Gradually stir in flour until smooth. Press dough evenly into bottom of pan lined with parchment paper or foil. Bake for 30 to 35 minutes or until edges start to brown.

3. Make the filling: Using a whisk mix sugar and flour in a large bowl. Add eggs stirring with whisk until thoroughly mixed and smooth. Stir in lemon juice and rind.

4. Make the blackberry Sauce: Puree blackberries and sugar in a food processor until smooth.

5. Pour filling onto baked crust. Pour blackberry sauce in five parallel lines across width of pan, using 1 tbsp for each line. Using the tip of a knife, gently pull through blackberry lines from side to side in alternating directions.

6. Bake for 30-35 minutes until set. Cool in pan. Once cooled lift out of pan using edges of parchment paper or aluminum foil. Cut into bars and serve with blackberry sauce. Refrigerate the remaining blackberry sauce.
