Cauliflower with cheese sauce

Ingredients
8 cups of cauliflower, small flower pieces (Sidhu)
2 tbls jalapeno seeded and chopped (J & E Produce)
1 cup of corn (J & E Produce)
2 cups onion diced (Armonda Farms)
1/2 cup Ancient Trees Olive Oil
2 tbls unsalted butter
2 cups shredded Flagship cheese
2 cups of low fat milk
1/2 tsp sea salt
1 tsp ground white pepper
Directions
1. Preheat oven to 400 degrees. Pour 1/4 cup olive oil on cookie sheet. Place cauliflower, jalapeno, corn, onion and pour the additional 1/4 cup olive oil over vegetables. Stir vegetables until evenly coated. Cook in preheated over for 15 minutes. Stir and return to oven for an additional 10 minutes.
2. While vegetables are cooking make cheese sauce. Melt butter in a large pan. Add flour to butter and whisk until smooth. Pour in milk and stir often until thick and bubbly. Add salt and pepper. Next add shredded cheese 1/3 at a time until cheese has melted, then add more cheese until all cheese is melted.
3. Remove vegetables from oven and stir into cheese sauce until evenly coated. Makes 6 cups.
