Sunflower seed cookies | Recipe of the Week

Visit the Federal Way Farmers Market from 9 a.m. to 3 p.m. every Saturday through October to pick up the local ingredients needed for this week’s recipe. The farmers market is located behind The Commons mall along South 324th Street in Federal Way.

Ingredients

3/4 cup coconut oil (solid not oil)

2/3 cup honey (Nova Bees)

2 eggs

1 1/2 cups all-purpose flour

2 tsp baking soda

3 cups rolled oats

1 tbsp grated lemon rind

1 cup lemon salted pumpkin seeds (Pike Street Nuts)

3/4 cup raisins (optional for sweeter cookie)

Directions

1. Preheat oven to 325 degrees. Cream coconut oil and honey using an electric mixer until well blended. Add eggs to mixture and beat until creamy.

2. Mix in flour and baking soda until well blended. Stir in oats, lemon rind, and pumpkin seeds. Add raisins (optional) at this time.

3. Drop a teaspoon of cookie dough on ungreased cookie sheet.

4. Bake for 10 to 12 minutes, or until cookies are light golden brown.

5. Cool in pan for 5 minutes before removing cookies. Cool on wire rack. Makes 4 dozen.
