Easy peach cake | Recipe of the Week

Visit the Federal Way Farmers Market from 9 a.m. to 3 p.m. every Saturday through October to pick up the local ingredients needed for this week’s recipe. The farmers market is located behind The Commons mall along South 324th Street in Federal Way.

Ingredients

1 1/4 cups of all-purpose flour

3/4 cup granulated sugar

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

Cooking spray

4 cups of peeled and sliced peaches (J&E Farms)

2 tbls lemon juice

1 tbls ground cinnamon

1 stick of butter sliced thin (1/2 cup)

1/2 cup honey (Novo Bees LLC)

Vanilla ice cream (optional)

Directions

1. Preheat the oven to 350 degrees. Spray a 9 x 13 inch baking dish with cooking spray. Set aside.

2. Mix the first five ingredients: flour, sugar, baking powder, baking soda and salt in a medium size bowl until well blended. Set it aside.

3. In a medium size bowl, combine peaches, lemon juice, cinnamon, and honey. Gently stir until well combined.

4. Pour peach mixture in to prepared baking dish. Using the back of spoon, evenly spread peaches. Using a large spoon sprinkle dry ingredients evenly over peach mixture. Layer butter slices over the top.

5. Bake for 40 to 50 minutes or until the top is golden brown and bubbling along the sides.

6. Cool slightly before serving. Serve with vanilla ice cream (optional). Serves 8 to 10.
