Cran-Apple Butter
By Vickie Chynoweth
Ingredients
2 pounds of Honeycrisp apples (or other sweet apple)
2 cinnamon sticks
1 single 11.5-ounce frozen cranberry juice concentrate
1 cup water
1/2 pound of red beets
16 ounces of honey
Directions:
Place all ingredients in a Crock-Pot, except for the honey.
Cut apples into quarters and remove seeds and stem. No need to peel apples. Peel and thinly slice beets.
Add thawed frozen cranberry juice concentrate, one cup of water and two cinnamon sticks. Cover, then turn the Crock-Pot on high for 3 hours.
Remove cinnamon sticks. Puree with a hand blender, blender or food processor. Fruit and juice is hot, so be careful when transferring from Crock-Pot to blender.
Once pureed, return back to Crock-Pot and add honey, mixing well. Leave the lid off the Crock-Pot and cook for 2.5 to 3 hours on high, stirring and scrapping sides occasionally, until desired consistency.
Pour into jars and refrigerate or freeze. Recipe makes about four cups.
Serving suggestions: on toast, ice cream, mix in yogurt, sauce for chicken, baked on pork, use instead of plum sauce.
This versatile Cran-Apple Butter goes well with both sweet and savory dishes. Enjoy!
